Sweet Paleo Frozen Breakfast
Im not sure about you but sometimes the ‘cook-up’ breakfast gets a bit tired. And well, Im tired of doing a clean up after it too. So this morning after I had just been to the gym -(I walked there and did a body weigh crossed with functional movement work out only). And was too ‘hot’ for cooked eggs etc, but also wanted to sit down for breakfast with a utensil, so a smoothie was out too.
This is what i arrived at;
Frozen Green Paleo Breakfast – with some sweetness included!
- 1/4 cup frozen berries
- 1 Kale leaf (stem removed) – only use the leaf part
- 1/2 cucumber
- 1 tbs (or more) creamed coconut or coconut butter
- 2 tsb chia seeds
- 2 tsb Linseed (Flaxseed) meal – or any other nut meal
- 2tsb shaved cococnut
- Pinch of cinnamon or drops of stevia if you want it a bit sweeter – i grow my own stevia so i add a few small leaves (its intensely sweet)
water or ice cubes if you want it more liquid or thicker.
Put everything in a mixer and blend, blend, blend.
Top with extra coconut shavings or nuts.
Its your call – you can add water or ice cubes depending on which way you want to take it. I like mine a bit ‘runnier’ if I’m having breakfast on-the-go.
This is a power punch of nutrients to start you day. The coolness of the cucumber is refreshing and the berries pack a vitamin C and Antioxidant hit. The coconut and seeds supply you with essential fats and proteins that will help keep your hunger pangs at bay.
This isn’t exclusively a Breakfast meal, i’ll often have it for dinner if I’ve have had a big lunch or come home too late to cook – or just being lazy. As its summer for us in OZ this is a perfect light meal option. If your reading this in the northern hemisphere then stay posted for a paleo friendly eggnog coming in time for Christmas!
